Salads are a great way
to get more vitamins from eating raw vegetables. By preparing and taking
your meals with you, you have a better chance of avoiding poor eating choices.
MEDITERRANEAN SALAD
1 lb spinach leaves
6oz olive oil
1 squash
1 cup black olives
Dry pint grape tomatoes
1 red pepper
3 TB chopped or pressed garlic
2 tsp Rosemary
2 tsp
Oregano
2 tsp Thyme
-or-
2 TB Italian seasoning
1 cup fresh mozzarella cheese, cubed
1 cup croutons
Chop
spinach leaves and place in large bowl.
In
a separate bowl, combine olive oil, squash, olives, tomatoes, seasonings, and
cheese.
Combine
with salad and refrigerate for 30-60
minutes or overnight.
Top with
croutons before serving. |
